  • Vineyard Very good soil of limestone and gravel. High density of plants, about 7500 plants per hectare (in Gaillac, 4500 plants per hectare is common). The vineyards are farmed organically, without certification. Green harvest and pruning is done until there are only 4 grape bunches on each plant. Yield is 25 hectoliters per hectare (in Gaillac, 50 hectoliters per hectare in common). Everything is hand harvested.
  • Vinification In the tank, the winemaker performs pigéage. There are 2 months of maceration, and then one year's aging in 20% new oak barrels.
