  • Winemaker Notes After a mild winter in the South of France, the first rays of sunshine brought with them birds twittering among the vines. In the old, traditional vineyards that have been relatively spared from intensive farming methods, there are Ortolan bunting, Common linnets and red-headed Shrikes, typical of our beautiful region. The stakes, which serve as supports for the vine stock, are a favourite lookout post for birds hunting for insects, and the grape seeds are a real treat for the hungriest ones.
  • Pairing Suggestions To be drunk with white meats and poultry. Serve between 16 ° and 18 °.
  • Tasting Notes A nice deep red colour. This wine delivers intense aromas of red fruits and spices. The mouth is generous and supple wine with silky tannins.

  • Vineyard Grown on the hottest and driest soils of the Languedoc, on dry and pebbly lands.
  • Vinification Desteming and crushing of all grape harvest. A part of grapes is traditionally vinificated (maceration of grapes in 24°), other one is thermovinificate (fermentation in liquid stage in a temperature of 20°). At the end of fermentation, the 2 parts are blending in a proportion 65/35.
