  • Vineyard Red limestone-clay soils with river stones from the "garrigues" (Mediterranean scrubland).
  • Vinification Traditional, with partial de-stemming according to the conditions of the particular vintage. Fermented in concrete vats. Separate vinification of the varieties and terroirs, blending afterwards. Average duration of maceration: 25 to 35 days. Pressing: by pneumatic days. Ageing in 600-liter French oak "demi-muid" barrels for 24 months.
  • Viticulture Yield: 20 to 30 hl/ha. Selection of old vines on terroirs with the best exposition. Hand picked, with selection of plots according to their level of maturity.
