  • Vineyard The vineyard is located on the right bank of the Tarn, on clay and limestone soils.
  • Vinification The grapes are brought by gravity in the pneumatic press after ten hours of skin maceration. The whole of the crop ferments in barrels, and then is bred and stemmed during the 8 to 9 months of its passage in barrel. The barrels are stirred with a wooden-implement twice a week for the first few months, then once a week for the last two months.
  • Viticulture The production is 36 hls/hectare. The grapes destined for the production of this cuvée are harvested on Domaine du Moulin's oldest plots of Sauvignon Blanc, which limits the quantity of wine obtained.
