WINEMAKER NOTES
After a mild winter in the South of France, the first rays of sunshine bring with them birds twittering among the vines. In the old, traditional vineyards that have been spared from intensive farming methods, there are Ortolan Buntings, Common Linnets, and Red-Headed Shrikes, typical of the beautiful Languedoc. The stakes, which serve as supports for the vine stock, are a favorite lookout post for birds hunting for insects, and the grape seeds are a real treat for the hungriest ones.
TASTING NOTES
A nice purple-red color. The nose reveals black fruit fragrances and delicate vegetal aromas. This open and silky wine delivers fresh and spicy aromas.
VINEYARD
Grown on the hottest and driest soils of the Languedoc, on dry and pebbly lands.
VINIFICATION
Destemming and crushing of grape harvest. A part of the grapes are traditionally vinified with a maceration done at 26 degrees. The other portion is thermovinified, which is a fermentation in the liquid stage at a temperature of 20 degrees. At the end of the fermentation, the two parts and blended in a proportion of 40/60.
