WINEMAKER NOTES
The vines of our Petit Paradis flourish on a magnificent plateau located to the south-east of the Saint-Chinian appellation. In this haven of peace nestling at 200 meters above sea level, the passion of the Mediterranean climate is tempered by the freshness of altitude. An exceptional climatic alliance revealing a complex and generous white wines.
TASTING NOTES
Brilliant gold color. Complex bouquet of white fruit and quince jam. Intense and soft on the palate with a long, spicy finish.
PAIRING SUGGESTIONS
Served chilled with a monkfish tagine, a ginger tuna, or chicken with cream.

VINIFICATION
Each grape variety is vinified separately. Pneumatic pressing. Cold settling, leaving fines lees which add richness. Controlled oxygenation for Marsanne and fermentation begun in vats before transfer to barrels for Vermentino. Aged 6 months in French oak barrels for Vermentino, and in stainless steel vats for Marsanne and Grenache Blanc.
