TASTING NOTES
It has a beautiful color with thick legs. An intense and very aromatic nose. One finds a large amount of aroma in the mouth feel. A lot of fleshiness and strength with a long reach on the palate.
PAIRING SUGGESTIONS
This wine can be served with fish dishes and white meat, as well as goat cheese or any other strong cheese. This vintage can be enjoyed as an aperitif.
VINEYARD
The vineyard is located on the right bank of the Tarn, on clay and limestone soils.
VITICULTURE
The production is 36 hls/hectare. The grapes destined for the production of this cuvée are harvested on Domaine du Moulin’s oldest plots of Sauvignon Blanc, which limits the quantity of wine obtained.
VINIFICATION
The grapes are brought by gravity in the pneumatic press after ten hours of skin maceration. The whole of the crop ferments in barrels, and then is bred and stemmed during the 8 to 9 months of its passage in barrel. The barrels are stirred with a wooden-implement twice a week for the first few months, then once a week for the last two months.
