WINEMAKER NOTES
To enjoy the power of this wine, it is recommended to open, or better, to decant the bottle at least two hours before its tasting. Can be aged for 10 to 15 years.
TASTING NOTES
The Vieilles Vignes Rouge cuvée will accompany your festive meals. It can be served on game, red meats, and with cheese.
VINEYARD
The vineyard is located on the left bank of the Tarn, with gravelly soils.
VITICULTURE
The production is 40 hls/hectare, low yields in order to obtain the full maturity of the grapes and the concentration necessary to develop great wines.
VINIFICATION
Harvested from the oldest plots of braucol and merlot in the estate. Domaine du Moulin looks for a long maceration after fermentation to extract the most color and tannin possible. The wine is then matured in oak barrels for twelve months (1/3 new barrels, 1/3 1 year old barrels, 1/3 2 year old barrels).
