Winemaker Notes
The Chateau des Moulins is owned by the same family for 6 generations. It is located in the Village of Vertheuil next the Abbey. These vineyards used to be planted and run by Monks of the Abbeys.
Tasting Notes
This estate has produced a floral, polished, and spicy wine. Elegant, juicy, medium bodied and lusty on the palate, with plenty of dark red berries and thyme to go around.

This Bordeaux is supple and versatile enough to be paired with cheeses, vegetables, meats, and many spice profiles. Try it with things like basque cheeses or manchego, lentils and mushrooms, black pepper steak or duck con fit, and spices like white pepper, rosemary, and coriander.

Vinification
Traditional vinification with a maceration of 3 weeks at 28°C then a final maceration above 30°C to emphasize the fruits and bring more richness and depth to the wine.
